Ingredients

  • Gol Guppay
  • 1 cup White Flour (Maida)

  • 1/2 cup Sooji (Semolina)

  • Gol Guppay Pani
  • 1/2 tsp. Red chili (Lal Mirch)-powder

  • 1/2 bunch Fresh Mint (Podina)-leaves

  • 1 tsp. Cumin Seeds (Zeera)

  • 1/2 tsp. Salt (adjust to taste)

  • 1 pinch Black Salt (Kala Namak)

  • 2 cup Water

  • 3 Green Chilies

  • 1/4 tsp. Ginger-paste

  • 1 tbs. Tamarind (Imli)-paste

  • 1/2 tsp. Carom Seeds (Ajwain)

Directions

  • Mix the white flour and sooji and kneed into a hard dough and flatten into a very thin sheet.
  • Cut into 2″ diameter circles with a cookie cutter.
  • Deep fry until golden.
  • Grind together all the ingredients for the dip and strain. Keep the liquid that strains through.
  • Boil some chickpeas and potatoes to stuff in the Gole Guppay or use imli chutney and ygurt, if you don’t want the dish to be plain.
