This is the way to do fried fish! Crispy, tangy, spicy and packed with flavor and hitting all your senses at once!

Ingredients

  • 4 medium Silver Pomfret fish

  • Marinade
  • 1 cup chopped cilantro

  • 4 cloves garlic

  • 1/2 tsp salt

  • 2 tbsp tamarind paste

  • 4 thai green chilis

  • 1/2 lemon

  • 1/2 tsp Ajwain

  • 1/4 cup water

Directions

  • Puree all the marinade ingredients and set aside
  • Score the fish on both sides in a crisscross pattern about 1/2 inch apart
  • In a cast iron pan or frying pan, add enough oil so that the fish is covered half way and heat to 300F.
  • Fry the fish on each side till slightly crispy – flipping only once. About 6-8 minutes per side.
  • Take the fish out onto a paper towel and let it cool down somewhat.
  • Heat a shallow pan with very little oil to medium heat.
  • Baste one side of the fish with the marinade and set it marinade side down. Fry for about 1-2 minutes. Based the top of the fish, flip and fry for another 1-2 minutes.
  • Remove from heat and serve immediately.
