Stew Salan or simply Stew Curry can be made with either beef, mutton or chicken. Simmered in a blend of aromatic spices, soft, juicy and cooked to perfection, this dish goes best with Naan (oven-baked flat bread) or Chapati (wholewheat flat bread). I haven’t tried cooking this in an InstantPot but I bet it would work well too!

Ingredients

  • 1 kg. Mutton/Chicken/Beef

  • 1 cup Onion-chopped

  • 1 cup Tomato-chopped

  • 1 tsp. Garlic (Lehsan)-paste

  • 1 tsp. Ginger (Adrak)-paste

  • 5 Black Pepper (Kali Mirch)

  • 4 Cloves (Laung)

  • 2 Black cardamom (Bari Ilaichi)

  • 3 green Cardamom (Chhoti Ilaichi)

  • 1/2 tsp. Cumin Seeds (Zeera)

  • 1 tsp. Salt (adjust to taste)

  • 8 Red Chilies-whole dried

  • 1 tbs. Coriander (Dhaniya)-whole seeds

  • 1 Cinnamon Stick (Dalchini)

  • 1 Bay leaf (Tezpatta)

  • 1/2 cup Yogurt

  • 1/2 tsp. Turmeric (Haldi)-powder

  • 1/2 cup Vegetable Oil

Directions

  • Sauté the onion in oil till till transparent.
  • Add the meat and cook to dry its water.
  • Add all the ingredients and 3 cups of water.
  • Cover and cook on low heat till meat becomes tender.
  • Garnish with fresh Coriander (Dhaniya) leaves and chopped Green Chilies.
  • Serve with naan.
